Located just 2 blocks from the old Union Stockyards on Chicago's south side, Ed Miniat Inc. is a meat processing and animal fat rendering company. Founded during the turn of the century by Lithuanian immigrant Michael Miniat, the company was in Chicago and operating during the time of Upton Sinclair's writing of The Jungle.
